Asam Pedas
Asam Pedas is one of the famous
Malaysian food especially in Melaka. This Malaysian stew fish is cooked
with tamarind juice and chili paste. The cooking process involves
soaking with tamarind fruit until it's soft and the squeeze out the
juice for the Asam Pedas gravy. Various vegetables use such as brinjals,
lady fingers and tomatoes. Fish or head fish also added in the gravy,

There
are various ways of cooking asam pedas based on districts and ethnic
community in Melaka. The Malays like to add vegetables and shrimp paste.
Baba Nyonya always add 'buah kluak' in their asam pedas while
